I’ve NEVER in my life made snickerdoodles before and I was randomly craving them the other day. So, of course, I had no reason not to make them! Just kidding – every recipe I found called for cream of tartar. Say whatttt? Fortunately, these can be made without cream of tartar and still taste deeee-lish!
-2 3/4 cups all purpose flour
-2 tsp baking powder
-1/2 tsp salt
-1 1/2 cups sugar
-1 cup unsalted butter at room temperature
-2 large eggs
-2 tbsp sugar for coating
-2 tsp ground cinnamon for coating
Preheat oven to 350
Sift flour, baking soda, and salt
Mix butter and 1 1/2 cups sugar on medium with a paddle attachment until fluffy. Mix in eggs and reduce speed to low. Gradually add sifted dry ingredients
In a small bowl mix together the 2 tbsp sugar and 2 tsp cinnamon. Shape dough into balls (using an ice cream scoop helps and makes them all the same size). Roll the formed dough in the cinnamon sugar and place on baking sheet lined with parchment paper.
Bake for 12-15 minutes on 350, let cool, and enjoy like I did!
