UMMM, YUM! My boyfriend sent me a picture of some shrimp tacos one of his roommates made and I was DYING for them! Unfortunately, being 3,000 miles away, I couldn’t go try his.. so I decided to make my own. I’ve made cilantro lime shrimp before, so I decided that was the kind I wanted to do… and it was a very good decision! I also threw in a little slaw “salad” I made, and avocado.
-corn tortillas of your preference
-shrimp (I used frozen, and had about 8 shrimp per taco, so you can decide size based on how many you’re making)
-1 bunch of cilantro
-avocado (I used 1/2 per person)
-limes (1 1/2 per 2 people)
-reduced fat mayonnaise
Coleslaw Salad (per 2 people):
Throw 1 1/2 cups of coleslaw into a bowl and add the juice of one lime. Get a small handful of cilantro, chop it up, and add that to your mixture. Add in up to 2 tbsp of reduced fat mayonnaise to thicken up the salad and mix. Taste to make sure theres not too much of one taste, and adjust accordingly.
Cilantro lime shrimp (per 2 people):
Devein and peel shrimp if neccessary. Rinse, dry, and throw in an olive oil sprayed skillet on medium heat. Cook until pink and then take off of the heat. Add in another small handful of chopped cilantro and the juice of 1/2 a lime.
Taco prep (per 1 serving):
Heat your tortilla if you’d like, and add some slaw, 1/2 of a diced avocado (or however much you’d like! — I loveeee avocado so I’d rather a whole one), a bunch of shrimp, and enjoy!
