This recipe was inspired both by my random craving of mango salsa and my boyfriends comment about how he makes the best mango “salad” (we’ll see about that). So since he wasn’t around to make this amazing mango “salad” of his, I whipped up my own idea of a sort of pico de gallo type of mango salsa. My mom was cooking up some shrimp while I was creating this masterpiece so I decided I’d throw some cilantro lime shrimp in with it!
I just received my package from crate and barrel and got these adorable appetizer spoons along with a few other cute little dishes and utensils so I was super excited to try them out. Just so happened that mango salsa and shrimp were the perfect fit for the spoons! Wow, everything seemed to be going my way within that hour!
After making and devouring this, I realized that it’s a super summery recipe but I don’t care! It’s been crazy cold over here in New Jersey, so hopefully if you decide to make this it’ll have you feeling like it’s summertime and keep you going to fight the cold!
So this is what I came up- simple and super easy- and delicious with shrimp!
-1 ripe but firm mango
-1/4 red onion
-1/2 small cucumber
-1 handful of cilantro
-1 small tomato
-1 tsp sea salt
Chop your mango, onion, cucumber, tomato, and cilantro and throw it in a bowl. Squeeze the lime juice over it and sprinkle your sea salt. mix and serve with chips, shrimp, atop salmon (which I really want to try!) or whatever you’d like. Enjoy!
