I had every intention to make basic vanilla chia pudding- but come on that was too boring and there are probably countless vanilla chia pudding recipes out there. Instead I wanted to “spice” things up with some earl grey tea! I’m sure this would be awesome with chai too (that will be the next chia pudding recipe). I’d say you can susbtitute your favorite tea flavor (in tea bag form) for the earl grey if you’re not a fan. I also got these adorable little mason jar mugs on sale at tj maxx and I had to show off how small and adorable they are. P.S this next picture was probably the hardest picture I ever had to take (by myself with no tripod and not on a timer because it wouldn’t focus!).
-1/4 cup chia seeds
-1 1/4 cup coconut milk
-1 tbsp agave
-1/2 tsp earl grey tea (about 1 tea bag)
-1/4 tsp vanilla bean paste (or 1/8 tsp vanilla extract) *optional
Just like the chocolate chia pudding, you’re going to want to put all of your ingredients in a bowl or mason jar/ something with a lid and mix or shake it up. Let it chill in the refrigerator for three hours or more (but for best results, overnight)). While chilling, shake it up a few times whenever you remember or see it in the fridge! Serve alone, as a parfait, or with some coconut flakes on top. Enjoy!
