This is somewhat of a ceviche, if you’d like to call it that. I would have named this post Ceviche, but I know what real ceviche is supposed to be (thanks to my amazing uncle who makes the world’s best), and this is definitely not it. Anyway, I do love ceviche but crabmeat is always my favorite part, so i made a somewhat refined version of this.
-crab meat (however much you want to use, immitation works also)
So, I’m not going to tell you exact measurements for this, because it’s all dependent on the amount of crab you use and the amount of lime and lemon juice you like. I like to taste less lime and more lemon, so I used two lemons and two limes. I also used a big handful of cilantro because I love the taste, and about 8oz of immitation crab meat (it was cheap and im only a college student!).
With a fork, separate crab meat into thin shreds in a bowl.
In a separate bowl, or with a juicer, juice lemons and limes. If you’re not using a juicer, you’ll want to use a strainer to get the juices into the bowl of crabmeat.
You want the juice to be covering the crab meat, so make sure to juice enough to cover.
Chop up some cilantro and throw it in the bowl. Mix all the ingredients, and the more time it soaks up the lemon and lime juice, the better it is.
I like to eat this with tortilla chips or plain saltine crackers. Enjoy!
