So I’m a little late on these magical little chia seeds, but for the past few weeks I’ve been dying to make the purchase. I wasn’t sure how I would feel about throwing them in my drinks and if I would like the texture so I decided to go buy a Mama Chia drink at Whole Foods before spending $10 on a bag. Even after trying the drink, I still was unsure. The Mama Chia drinks are very thick and almost have a thin jelly type texture, and I’m not too fond of jelly. Despite not absolutely, 100%, loving it, I figured I’d just buy it anyway and I can always just throw it in a smoothie without really being able to tell it’s in there (Smoothie recipes soon!). On the back of my Bob’s Red Mill bag of Chia seeds, I saw a recipe for Chia Fresca and decided try it out in a more healthy style!

Ingredients for 1 cup:
-1 cup of water or coconut water
-1 tbsp chia seeds
-1/2 tbsp fresh lemon or lime juice
-1/2 tsp sugar
-(I added some pomegranate seeds for color!)
First add the chia seeds to your water of choice and let it sit for 5-10 minutes to let the chia seeds absorb some of the water and form a sort of “chia gel.” Add your lime or lemon juice, sugar or sweetener of choice, and stir it up. The seeds will accumulate at the bottom, so make sure you have a way to stir it up every now and then. Enjoy!
