If you love Panera Bread’s Broccoli Cheddar Soup, I know you’ll love this! Quinoa is very high in protein and I like to think of it as a healthier alternative to rice. I love quinoa with anything- in salads, by itself, for breakfast (WHAT?!). There are sooo many different ways to utilize these little protein packed seeds! They do sometimes get pricey so whenever I find a good deal, I stock up!
-1 cup quinoa
-1 1/2 cups water
-1 1/2 cups chopped broccoli
-1 cup shredded cheddar cheese (shhh.. I used more)
Bring water, quinoa, and broccoli to a boil on medium heat. Turn down to a simmer and cover until the water or broth is absorbed (12-15 minutes)
Turn off heat and add in the cheese, along with salt and pepper to taste!
