Although I’m not a morning or breakfast person, I know it’s important to eat breakfast every day. I usually opt for something quick and easy: hard boiled egg and a smoothie or a piece of fruit. Lately, I’ve been loving the idea of avocado with my breakfast, so I’ve been making this whenever I get avocados! I know it’s not a recipe, but I also know a lot of people who ask me for breakfast ideas. This one’s quick, easy, filling, and DELICIOUS! I usually make it as a wrap, but today I made it on a slice of whole wheat bread.
Sometimes I scramble the eggs, other times I’m in the mood for an egg over easy. It’s up to you! This is a totally flexible recipe idea, you can add or take away whatever you’d like. I also like to add black beans on mine whenever I have them on hand! If you’re making a wrap, just know an egg over easy in a wrap is VERY messy and makes eating it quite unattractive, but who cares!
