GOAT CHEESE! I love it. I usually wind up getting cranberry cinnamon goat cheese, but there was a special on blueberry goat cheese this week so I decided to try it. It’s so good! I usually don’t like blueberries but I really liked this– and it’s purple (my favorite color). I’ve also been wanting to try using Naan to make a pizza because I’ve been obsessed with it since my boyfriend introduced me. I used just the original naan for this pizza but the sweet kind would be awesome as well. ALSO, I decided to be really weird and try to make sweet chicken. It came out great for the pizza but I felt really weird doing it, haha. Trust me though, it will be fine!
Ingredients (per about 1 serving-Naan is small):
-Original Naan (can be made or bought in bakery area)
-Goat cheese (blueberry or any other)
-1 small chicken breast
-Handful of spinach
-1/8-1/4 of an onion
For the Naan:
I didn’t cook mine but I wish I had before hand to make it more crisp. I suggest cooking it on 400 for a few minutes or follow the directions on the back if you like your pizza a little more crispy!
For the Chicken:
Sprinkle your chicken with cinnamon and salt on both sides and dice. In a small saucepan, spray or drizzle some olive oil and cook on medium until both sides are no longer pink and/or browned. Drizzle some honey over the chicken and shake it up in the pan to coat evenly. Set aside.
For the onions:
Slice the onion into strips and throw them in a small saucepan on medium heat with some olive oil and cinnamon. Cook until carmelized and soft then set aside.
For the Pizza:
First, spread some goat cheese on the naan. Rinse and dry your spinach and rip it into pieces to cover the naan. Throw your chicken, onions, cranberries, and walnuts on there. I added some mozzarella cheese and more goat cheese as well. Throw that back in the oven for a few minutes to heat everything up and melt any cheese. Cut it up and enjoy!
