Have you ever seen a bright magenta burger before?! I can’t say I have, but doesn’t it look cool? Like I mentioned in my juicing post, I didn’t want to waste the leftover pulp so my friend and I came up with the idea of making veggie burgers. This was totally made up as we went along, so feel free to change things up to your own liking or add more of this or that to make sure you get the right texture.
Ingredients: (made about 6 regular sized burgers)
-Juice pulp from your awesome beet juice!
-3/4 to 1 cup of panko or regular bread crumbs
-1 egg white
-1 pinch of salt
-1 punch of pepper
-1/2 a green bell pepper, diced
-1/4 red onion, diced
In a medium or large saucepan, heat 2 tsp of oil over medium heat and add your onions and peppers. Cook until tender (4-6 min) and add them to your juice pulp. Add 1 egg white and your dry ingredients, and mix together. Form patties with the mixture and place in the saucepan with additional oil. Cook each side until browning (hard to tell, so I’d say about 8 minutes each side) on medium/low). Serve on buns or with a salad and enjoy!
