Okay, so I’m used to my moms amazingggg, to die for banana bread and this was quite a difference from hers. It’s not as sweet (because there’s no white sugar) and I only had two ripe bananas but I would rather have used 3. In any case, I still give this one two thumbs up, considering it’s free of white sugar, white flour, dairy for the most part, and has protein powder in it.
– 2 (3 would be better) ripe bananas, mashed
-1/4 cup oil (i used coconut)
-1 1/2 cups almond flour
-1 or 2 scoops protein powder (I used soy chocolate)
-1 tsp vanilla
-1/2 tsp salt
-3/4 tsp cinnamon
-1/2 tsp nutmeg
-3/4 tsp baking powder
-3/4 cups brown sugar
Preheat oven to 350 degrees.
Mix all ingredients in a large bowl until there are no clumps.
Grease and flour a loaf pan, and pour the mixture in.
Bake at 350 for 55-65 minutes, or until a cake tester comes out clean from the center.
Remove and let cool.. Enjoy!
